Chicken with Olives, Capers and Figs

This has a lovely balance of sweet and acid elements. It has been adapted from a Maggie Beer recipe. Marinate the day before and then it comes together very quickly.

Pork and Veal Koftas

These are a great way to make mince interesting! Good quality mince is lower in saturated fat too. I serve with a rice dish- such as vegetable pilau rice, a salad and the yoghurt sauce.

Spiced Roast Chicken with Corn Stuffing

A healthy heart recipe, this roast chicken has a delicious stuffing. Serve with potatoes roasted with a little olive oil and lots of steamed greens.

Pulled Pork Ponzu Noodles

A great way to use up leftovers from the fridge and combine with a tasty Japanese stye sauce and some wholegrain noodles for a quick and easy meal. When you eat meat you can still increase fibre in the diet by combining with lots of vegetables and a wholegrain carbohydrate such as these noodles.
