Easily my favourite way to eat salmon at the moment. All thats good- salmon for lean protein and omega 3's, bok choy with all the benefits of cruciferous vegetables and the fantastic combination of ginger, garlic, chilli and sesame- yum, yum, yum!
Flavours of the Mediterranean...most supermarkets will sell a marinara seafood mix in the deli and this makes an economical seafood meal. Serve on wholemeal spaghetti or one of the new pulse-based pastas (eg chickpea pasta) for extra fibre. A green tossed salad completes the meal.
