Harissa Salmon on Spiced Lentils

This super healthy dish provides a double whammy of protein. Serve with some steamed greens for a complete meal.

Harissa Salmon on Spiced Lentils

(For four)

4 portions of salmon fillet
1 Cup red lentils
1 Small onion, chopped
1 tsp cumin seeds
1 tsp ground cumin
1 tsp fennel seeds
1 tsp grated fresh ginger
Vegetable stock
1/2 Fresh Chilli , chopped (or some chilli powder- maybe 1/4 tsp?)
1/2 Cup fresh coriander, chopped
Salt and pepper to taste
2 Tbsps of Harissa paste - buy it or use my recipe
Olive oil
Lime wedges to serve

1. Spread half a tbsp of harissa onto each piece of salmon and place on a baking tray lined with baking paper. Refrigerate for now.
2. Heat the olive oil in a pan and add chopped onion, fennel and cumin seeds and ground coriander.
3. Saute until onion is softened then add ginger, chilli and lentils.
4. Cover with just enough vegetable stock to cover the lentils and bring to a simmer.
5. Simmer until the lentils are soft and have absorbed all of the liquid. You may need to top up the liquid during cooking, and stir to make sure lentils don't stick to the bottom of the pan.
6. Heat the oven to 180 C.
7. Cook the salmon pieces in the oven for 8-10 minutes depending on their thickness.
8. Adjust seasoning in lentils.
9. Spread some lentil mixture on the bottom of each plate and sprinkle with chopped coriander.
10. Place a piece of salmon on top of the lentils. Garnish with a lime or lemon wedge.
