Vegan Raw Brownie
Faced with the challenge of what to make for a relative who is gluten free, dairy free and egg free I remembered this no-bake chocolatey slice. Whilst coconut oil is not my favourite oil, it works for a dairy free and vegan alternative. The whole thing is rich and full of fibre.

1 Cup cacao or cocoa powder
1/2 Cup honey
1/2 Cup coconut oil
300g LSA (Linseed, soy, almond mix)
Handful dried blueberries, cranberries or finely chopped prunes
Handful of nuts of your choice
About 175g Dairy free cooking chocolate
1 Tbsp coconut oil
Place the first four ingredients in a food processor or mixer. Mix well.
If using a mixer, chop the fruit and nuts well before adding them too.
If using a food processor, the machine will do this for you.
Line a baking tray with non stick paper.
Press the mixture down well to cover the base.
Refrigerate whilst you prepare the topping.
Melt the coconut oil and dairy free chocolate together in a microwave. Heat gently to avoid the chocolate burning.
Once it is a smooth mass, pour over the slice and tip the tray slightly from side to side to make sure the whole surface is covered.
Refrigerate again until the topping has completely set.
Remove from the tray carefully by lifting out holding the edges of the paper.
Cut into small squares to serve.
