Because there is no baking involved here, there's a fair amount of licence to change ingredients according to what you have and what you like. Ground almonds can be expensive so oats could also be used, but then the balls won't be gluten free anymore.
1 Cup pitted dates
1 Cup dried apricots
1 Cup shredded coconut
1 Cup almond meal
Half a Cup Raw Cacao or Cocoa powder
4 Tbsps Orange juice
Half a Cup pepitas or sunflower kernels, or chia seeds or puffed quinoa (all optional).
Extra dessicated coconut for coating
Blitz the dates and apricots in a food processor.
Add Quarter Cup hot water and leave for 5 minutes to soften.
Add rest of ingredients and process until well combined.
Stir in puffed quinoa if using.
Roll into balls and coat with coconut.
