Fragrant Spiced Lentils
From one of my favourite books- 'More From The Accidental Vegetarian' by Simon Rimmer.
Olive oil
1 Red Onion, finely chopped
2.5cm piece of Fresh Ginger, peeled and chopped
2 Fresh green and 2 red chillies (I use mild long ones but choose your own level of heat!)
1 Lemongrass stalk, finely sliced
300g Red Lentils, washed and drained
400ml Vegetable Stock or water
6 Fresh Kaffir Lime Leaves, shredded finely
A good handful of Chopped fresh Coriander
Juice of 1 Lime.
Heat a little oil in a pan. Add onion, ginger, chilli and lemongrass and saute until softened.
Add the lentils, stir quickly through the oil then add vegetable stock and bring to the boil.
Reduce heat, cover and simmer for about 20 minutes. The lentils should be soft and the stock all absorbed.
Stir in lime juice, kaffir lime leaves and coriander.
Serve.
