Quinoa and Chickpea Cakes
It's a bit hard to find good vegetarian alternatives to burgers which hold together well. These are not bad!
1 x 400g Can of Chickpeas, drained
1/2 Red Onion, finely diced
1 Zucchini or 1 Carrot, grated
3 Tbsps Coriander, finely chopped
3 Tbsps Red wine vinegar
2 Cloves Garlic, crushed
2 heaped Tbsps Peanut butter
1 tsp Cumin
2 tsps ground Black pepper
1/2 Tsp Turmeric
1/4 Tsp Salt
1 Cup of cooked Quinoa
1 large handful Spinach leaves, chopped
Olive oil to cook.
Place the chickpeas in a bowl and mash with a fork.
Add all the other ingredients and mix well to combine.
Using your hands, shape into 6-8 patties.
Heat the oil in a heavy based pan and fry for 3 minutes on each side.
TIPS:
I did this in a food processor, but take great care not to over process or all the texture will be gone. I also cooked on baking paper to avoid the cakes sticking to the pan.
Serve with chilli jam, or a homemade salsa (I used tomato, avocado, onion, coriander, chilli and garlic dressed with a little olive oil and red wine vinegar).
