1.Preheat the oven to 180 C.

2.In a bowl combine all the dry ingredients.

3. Mash the bananas.

4. Whisk the eggs into the milk, olive oil, vanilla and honey.

5. Add the wet mixture and the bananas to the dry ingredients.

6.Combine well.

7. Line a loaf tin with baking paper, up the sides as well as on the base.

8. Pour/scrape the mixture in.

9. Bake for 45-50 minutes. Test with a skewer to make sure the  centre is cooked before removing from the oven and cooling in  the tin.

Banana Chia Bread

Cake for breakfast is not ideal but for a treat or a swift brekkie on the go with a cup of coffee this one is not too bad at all.

In a small jar, combine the oats,  milk and maple syrup or honey. Stir and chill overnight.
In the morning, scoop the oats into a bowl, stir in more  milk, if desired, for consistency. 
Top with desired toppings. I like fresh blueberries and sliced apple but you could try strawberry and chopped almonds, honey banana and walnuts, stirred in cocoa with fresh cherries (Black Forest oats!) or frozen raspberries and chopped roasted macadamias.
Or, for a really fast breakfast, you can assemble the overnight oats in jars with the toppings the night before and take it with you to work.

Blueberry and Apple Overnight Oats

Busy mornings? Prepare two or three servings of overnight oats at a time and top with your favourite fruit, chopped nuts, seeds or a cooked fruit puree.

Put all the grains in a large lidded plastic container. 
Add the fruit medley, oat bran, psyllium, linseed, hemp seeds, chopped prunes, chia seeds and any other dried fruit.
Heat the oven to about 170 C.
Bake on a large tray (one variety at a time since they have different cooking times) the nuts, the  pepitas and sunflower kernels and the coconut. Watch the coconut like a hawk. It only takes about 5 minutes and then it will burn!
Add toasted seeds and coconut to muesli. Chop the nuts then add.  (I use a food processor, but keep them fairly chunky).
Mix it all together well.
If I make a large batch I keep some in the fridge or freezer so that the nuts and seeds remain fresh.

Home Made Muesli

I love making my own muesli. It has exactly the ingredients that I want in it and no added oils, sugars etc. Customize this to create your own favourite mix.

Preheat the oven to 180 C. 

Oil the holes of a 12 hole muffin tin and place small circles of baking paper in the base of each.

Grate the zucchini and the halloumi.

Chop the shallots.

Place in a bowl. Add the flour, remaining oil, pepper and shallots.

Beat the eggs lightly.

Mix through the zucchini mixture.

Spoon into the muffin tin.

Bake for 25-30 minutes until golden and puffy.

Leave to cool in the tin for 10 minutes before turning out.

Zucchini Halloumi Cakes

For a savoury breakfast that's healthier than bacon and eggs, try making these little fellows. Serve with some roasted cherry tomatoes and a piece of wholemeal toast.
